Mango and Walnut Salad

Refreshing, easy to make and sure to win you many friends. This mango and walnut salad is all about Summer, and using up all those excess mangoes. For a variation, try adding some crispy pancetta or some fresh prawns.

Serves: Makes 1 salad bowl
Cooking Time: Preparation 15 minutes


+ Enough salad leaves for your bowl
+ 1-2 mangoes
+ 1 large avocado
+ 3 shallots
+ 3/4 cup walnuts
+ 1/4 cup flaked almonds
+ 100g crumbly feta cheese (I prefer Australian)


+ Combine 1 part balsamic to 2 parts olive oil
+ Juice of half a lemon
+ 1/2 teaspoon brown sugar
+ Pinch of salt


Putting together this salad is easy! Firstly place your lettuce leaves in your salad bowl. Remove the skin from the mango, and divide the mango cheeks into approximately 1-2 centimetre segments. Scoop the avocado from its skin, and slice into segments. Add mango and avocado, along with sliced shallots, walnuts, almonds and feta into the salad bowl.

To make the dressing, place the dressing ingredients in a small container with a lid. Stir with a teaspoon until sugar has dissolved. Before serving, put the lid on and shake the dressing to combine. Place on salad and lightly toss! Enjoy!
