Anita’s Chewy Chocolate Slice

Contrary to the name of this blog, I will admit to loving that which is quick and easy. This recipe is one of those. It is not only quick, it can probably be made from that which is already in your cupboard, without an electric mixer and it is delicious.

Serves: Makes 20+ serves
Cooking Time: Preparation 20 minutes, cook 30 minutes (plus cooling time)


For the slice:
+ 250g butter, melted
+ 2 cups (440g) firmly packed brown sugar
+ 2 eggs
+ 2 teaspoons of vanilla essence
+ 1 (150g) cup plain flour
+ 1/2 (70g) cup self raising flour
+ 4 tablespoons cocoa
+ 1 cup shredded coconut
+ 2 tablespoons of shredded coconut (to sprinkle on top)

For the icing:

+ 2 cups icing sugar
+ 4 tablespoons cocoa
+ 4 teaspoons butter
+ 2 tablespoon hot water


Preheat the oven to 180°C. Grease and line 19 x 29 centimetre slice pan with baking paper, leaving a little lining over each side.

In a bowl, combine the butter, sugar, egg and vanilla. Stir in sifted flours and cocoa then add coconut. Spread the mixture into the pan and bake for 25 minutes or until firm.

Make the icing while the base is baking by combing all ingredients in a small bowl until smooth.

Remove slice base from oven and spread the icing straight away. Sprinkle with the extra quantity of coconut. Once cool, slice into desired number of sections.

  1. I also made this chocolate delight for our staff “Picnic’ today and it was eaten and enjoyed very quickly. I used a larger baking dish and adjusted the ratio’s accordingly.
