BBQ Chicken Nibblies

As summer begins its slow decline, I begin to miss the foods/smells of summer. These BBQ Chicken Nibblies have been a favourite this summer season. They are great for feeding a crowd when you don’t have enough forks and knives, and they taste simply amazing! The chargrilled limes that they are served with add a delicious touch of zing to this meal!

Serves: 4
Cooking Time: Around 20 minutes total for preparation and cooking

+ around 12 chicken wings/drumsticks/mini drumsticks (I go for around 3 pieces of chicken per person)
+ 6 – 8 limes, halved
+ drizzle of olive oil

Spicy rub
+ 2 teaspoons brown sugar

+ 1/2 teaspoon salt
+ 2 teaspoons smoked or hot paprika
+ 1 teaspoon ground allspice
+ 1 teaspoon cayenne pepper
+ 1 tablespoon freshly ground black pepper
+ 1 teaspoon garlic powder, or 1 clove minced

Preheat a BBQ or a chargrill pan to medium-high heat. To make the spicy rub, place all ingredients in a small bowl and mix till combined.

Place your chicken portions in a large bowl, drizzle over a touch of olive oil and add the spicy rub. Toss the chicken to ensure all surfaces are well coated.

Add the lime halves to the BBQ plate and cook for a couple of minutes until caramelised, then remove and set aside. Grill the chicken portions for 10-15 minutes on each side, or until cooked through. As your are cooking, squeeze the juice from some of the chargrilled limes over the chicken.

Serve your chicken hot, with the remaining chargrilled lime halves alongside.
